Oslo Raw: A Spring Awakening





(April 2021) This week we have had a series of April snow showers! Where`s Spring? So, I donned my mask and headed over to Oslo Raw to pick up a dose of springtime. If you are not familiar with Oslo Raw and if the name hasn`t tipped you off, it’s a boutique chain of plant-based cafes focusing on raw, healthy, nutritional food.


But, it`s more than that… owner, Tiril Refsum, has clearly mapped out her vision both on the menu and in the design and physical space of Oslo Raw. The café’s environment is as nourishing as the food itself. As I waited to pick up my fresh goodies and mint tea, I felt like I was being steeped in the beautiful floral patterns and healing tranquil colors that cover the café from floor to ceiling. It’s no wonder Tiril was able to open three locations during a pandemic - she`s soothing the Oslo community through wholesome treats during this global upheaval.


At home as I dined on Spring fennel and arugula salad topped with edible flowers, apples and walnuts; I thought of those beautiful cherry blossoms that greeted me in the café and I waited patiently for the snow to stop.
